Ingredients

 
2 Eggs; hard-boiled; peeled and chopped
1 teaspoon Vegan mayo
1/2 teaspoon Red onion; diced fine
1 squeeze (5 drops) Fresh lemon juice
1 pinch Dried parsley
1 pinch Paprika
to taste, Salt
to taste, Freshly ground pepper
2 slices Whole grain sandwich bread; optional
1 leaf Red leaf lettuce; optional
3 slices Vine tomato; optional
Original recipe makes 1 Serving

Ready in 10 minutes

Preparation

1. Mix eggs and mayo to combine.

2. Stir in onion, lemon, parsley, paprika, salt and pepper.

3. Eat as is or make a sandwich with the tomato and lettuce.
